Ingredients:
375g pack SAXBY'S READY ROLLED PUFF PASTRY
4 tbsp sun-dried tomato paste
2 garlic cloves, crushed
1 Yellow pepper, sliced
1 small red onion, sliced
½x397g can artichoke hearts, drained and halved
12 black olives, pitted
50g can anchovy fillets in olive oil
1/2 tsp dried oregano
30g (1oz)freshly grated Parmesan
Freshly ground black pepper
1 egg, beaten
Method:
Preheat the oven to Gas Mark 7, 220'C. 425'F. Unroll the pastry onto a lightly greased baking sheet and score a 2cm (3/4 inch) border in from the edge. Mix the sun-dried tomato paste with the garlic and spread over the pastry base, inside the border. Scatter the peppers, onions. Artichokes and olives over the base and place the anchovies on top in a criss-cross pattern. Sprinkle with the anchovy oil, oregano, cheese and season with pepper. Brush the border with egg and bake for 15-20 minutes until the pastry is golden brown. Serves 4-6.
